Is there a way to have the first (or more) columns be locked in position while you scroll horizontally?

Yes. You would set this property:

https://www.essentialobjects.com/doc/eo.web.grid.fixedcolumncount.aspx

If you want to keep one column, you set it to 1, if you want to keep two columns, set it to 2, etc.

Yes. This is correct. A fixed column is not editable.
